This was not a weekend for baking. Yesterday’s Dutch baby pancake was a leaden and flat disaster, why I don't know. I can only think that perhaps the cast iron pan with a straight side was too warm and the batter could not rise. The lemon bliss cake on the other hand rose but ended up dense, not light and airy. Trying to figure out why the cake was so heavy and dense, I reread the recipe and realized that I had only used one stick of butter which is 8 tablespoons, in a recipe calls for 16 tablespoons.
